Grapes are cooled and sorted to select only the finest grapes. The berries are then destemmed and pressed and the juice is fermented in closed stainless steel containers under controlled temperatures. As our warm region is more well known for the sweeter styles, we decided to make a fruity, but somewhat sweet wine from Colombard in 2005. In the future we plan to produce full sweet, semi-sweet and dry whites. The fermentation process can be stopped at the desired sugar and alcohol content.

ADRENALINE RED & EXPLORERS PORT - Red wine production

Grapes are cooled, sorted and destemmed and then fermented on the skins in open containers, until dry before they are pressed. Malolactic fermentation is done in the barrels and the wine is then left to age in French oak.
